  RECIPE CONTEST WINNERS

First Place: Buzzing Tortellini Soup

1/2 pound mild sausage links
2 1/2 + cups Bloodys by Buz™ Original Bloody Mary Mix, divided
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 cups beef broth
1 (16 oz.) can whole tomatoes, drained and chopped
1 large carrot, sliced
1 small zucchini, halved and sliced
1 (9 oz.) package refrigerated, cheese filled tortellini
1 cup grated Parmesan cheese

1. Cook sausage, turning occasionally, in medium skillet over medium heat 7 minutes or until evenly browned. Add 1/2 cup Bloodys by Buz™ Original Bloody Mary Mix. Reduce heat to low; cover, and simmer 20 minutes. Drain and let cool to touch.

2. Meanwhile, heat oil over medium-high in large 5-quart saucepan or Dutch oven. Saute onion and garlic until soft, about 3 minutes. Stir in remaining Bloodys by Buz™ Original Bloody Mary Mix, beef broth, tomatoes, and carrots. Bring to a boil over high heat. Reduce heat and simmer, uncovered, 30 minutes, stirring occasionally.

3. Cut cooked sausage into slices. Add to soup mixture. Return to a boil and add zucchini and tortellini. Gently boil 7 minutes or until tortellini is cooked. Ladle into 6 shallow soup bowls and top with Parmesan cheese.

If needed when reheating soup, add more Bloodys by Buz™ Original Bloody Mary Mix.
