4 Cups chopped Yellow Onion
3/4 Cup chopped Celery
1 Stick Butter
1-1/4 teaspoons Kosher Salt, or to taste
1/4 Cup chopped fresh
Basil, or 1 heaping teaspoon dried Basil
1 teaspoon Granulated
Garlic
1/2 Cup BLOODYS BY BUZ™ Bloody Mary Mix
1/2 Cup Self-rising Flour
8 Ounces shredded Italian Cheese Blend
6 Cups Evaporated Milk
2 large Egg Yolks
1 Pound cooked, shelled and picked-over Crab
Meat
1 Pound cleaned, cooked Crawfish tails
2 tablespoons Chopped
Green Onion (with some tops)
8 Cups cooked al dente Fettuccini
Lemon Pepper Pasta, warm (Spinach or plain Fettuccini can be
substituted)
In a large pan, saute yellow onions and celery
in butter over medium-high heat. Reduce heat, cover and simmer
15-20 minutes on low heat, stirring occasionally. Add salt,
basil, granulated garlic, and Buz's Bloody Mary Mix, stirring
well to combine.
In a separate bowl, whisk together the flour,
cheese, evaporated milk and egg hyolks. Add the milk mixture
to the sauce pan and whisk over low heat until the cheese has
melted. Stir in the crabmeat and crawfish tails. Cook until
heated through; stir in the green onions, taste and adjust
seasonings as needed (crushed red pepper flakes or cayenne
pepper can be added if desired). Pour sauce over pasta and
serve...Garnish with sprigs of fresh basil, parsley or oregano.
