Fifth: Bloody Good Roasted Tomato Pudding
2 cups Bloodys by Buz™ bloody mary mix
1/2 cup unsalted vegetable
stock or broth
1/4 cup unsalted butter, melted
1/2 cup brown sugar
2 eggs
2 cups crossiant bread, torn
4 cups roasted tomatoes, peeled
and chopped
Non stick cooking spray
Preheat oven to 350 degrees. In a medium
bowl whisk together the bloody mary mix, vegetable broth or
stock, butter and brown sugar. Add the eggs, one at a time,
mixing well after each additon; set aside. In a larger bowl
stir together the bread and tomatoes. Slowly add the liquid
mixture to the contents of the larger bowl and fold together.
Spray a 2 quart baking dish with non stick cooking spray and
pour in the pudding mix. Cover dish and bake for 45 to 55 minutes
or until a knife inserted in center comes out clean. Makes
8 servings.
